- 1 large onion, finely chopped
- 1 1/4 cups [310 mL] lean chicken or turkey broth or beef broth
- 1 [8-ounce / 227-mL] can tomato sauce
- 1 [8-ounce / 227 mL] can tomatoes, broken-up
- 1 cup [250 mL] long-grain brown rice
- 1 sweet red or green pepper, seeded and diced
- 1 celery stalk, finely chopped
- 1 teaspoon [5 mL] mustard
- 1 bay leaf
- 1/2 teaspoon [2.5 mL] oregano

- Into a large non-stick frypan sprayed with non-stick spray, brown onion.
- Mix in chicken, turkey or beef broth, tomato sauce, tomatoes, brown rice, sweet pepper, celery, mustard, bay leaf and oregano.
- Cover and simmer for 50 minutes, stirring from time to time.
- Just before serving, remove and throw away bay leaf.
