Spanish-Style Brown Rice

  • 1 large onion, finely chopped
  • 1 1/4 cups [310 mL] lean chicken or turkey broth or beef broth
  • 1 [8-ounce / 227-mL] can tomato sauce
  • 1 [8-ounce / 227 mL] can tomatoes, broken-up
  • 1 cup [250 mL] long-grain brown rice
  • 1 sweet red or green pepper, seeded and diced
  • 1 celery stalk, finely chopped
  • 1 teaspoon [5 mL] mustard
  • 1 bay leaf
  • 1/2 teaspoon [2.5 mL] oregano
  • Into a large non-stick frypan sprayed with non-stick spray, brown onion.
  • Mix in chicken, turkey or beef broth, tomato sauce, tomatoes, brown rice, sweet pepper, celery, mustard, bay leaf and oregano.
  • Cover and simmer for 50 minutes, stirring from time to time.
  • Just before serving, remove and throw away bay leaf.
