Chicken Rice

  • Lean chicken broth
  • 1 sweet green pepper, diced
  • 1/2 cup [125 mL] diced onion
  • 1/2 cup [125 mL] diced celery
  • 1 [10-ounce / 284-mL] can mushrooms, drained
  • 4 ounces [113 g] cooked chicken, diced
  • 1/2 cup [125 mL] hot boiled rice
  • Soy sauce, to taste
  • Boil together green pepper dices, onion dices, celery dices and drained mushrooms into just a little hot, boiling chicken broth, until broth has completely evaporated.
  • Mix in chicken dices and hot boiled rice.
  • Stir in some soy sauce; thoroughly mix.
  • Serve.
