Confetti Rice

  • 1/2 cup [125 mL] chopped onion
  • 1/3 cup [75 g] margarine
  • 1 cup [250 mL] freshly chopped mushrooms
  • 3 cups [750 mL] hot boiled rice
  • 1 [10-ounce / 284-mL] can small peas, drained
  • 1 teaspoon [5 mL] salt
  • 1/8 teaspoon [0.5 mL] pepper
  • 1/4 teaspoon [1 mL] rosemary
  • 1/4 cup [60 mL] toasted almonds
  • Brown onion into melted margarine.
  • Mix in mushrooms, boiled rice, small peas, salt, pepper, rosemary and almonds.
  • Serve.
