Greek Restaurant-Style Rice for Brochette [wok]

  • 2 cups [500 mL] long grain rice
  • Olive oil
  • 1 to 2 sweet green peppers, diced
  • 2 large onions, minced
  • Approximately 1 tablespoon [15 mL] chicken broth concentrate powder [it is important that you use powdered concentrate].
  • Pepper, to taste
  • Boil and drain rice; set aside.
  • Pour a little olive oil into a wok; preheat wok.
  • Into hot olive oil, just soften [do not brown] green pepper dices and minced onions.
  • Mix in reserved boiled rice and chicken concentrate powder; check, adding more chicken concentrate powder if needed.
  • Just before serving, pepper hot rice.
