Arborio Rice 'Alla Bolognese'

  • 1/2 medium-size onion
  • 1 celery stalk
  • 1 small carrot
  • 3 tablespoons [45 g] butter
  • 1/4 pound [113 g] bacon dices
  • 1/2 pound [227 g] ground beef
  • 14 ounces [398 mL] spaghetti sauce
  • 1 cup [250 mL] water
  • Salt, to taste
  • Nutmeg, to taste
  • 1 pound [454 g] arborio rice
  • 1/3 cup [80 mL] grated Parmesan cheese
  • Chop onion, celery stalk and carrot.
  • Into a casserole, mix together chopped onion, celery and carrot, butter, bacon duces and ground beef.
  • Brown for approximately 10 minutes.
  • Mix in spaghetti sauce and water.
  • Simmer for approximately 1 hour, stirring from time to time; sprinkle with salt and nutmeg.
  • Boil arborio rice following packaging directions.
  • Transfer drained arborio rice into a serving dish; coat with sauce.
  • Coat arborio rice with sauce, then evenly sprinkle with grated Parmesan cheese.
  • Serve immediately.
