Rice Jambalaya

Comments: Excellent along with a fondue.

  • 4 slices bacon, finely diced
  • 1/2 cup [125 mL] chopped onion
  • 1/2 sweet green pepper, chopped
  • 3 cups [750 mL] water
  • Approximately 3 tablespoons [45 mL] liquid chicken broth concentrate
  • 2 tablespoons [30 mL] brown sugar
  • 1/2 cup [125 mL] catsup
  • 1/2 teaspoon [2.5 mL] salt
  • 3 cups [750 mL] minute rice
  • Preheat oven to 350°F [180°C].
  • Into a frypan, brown together bacon dices, chopped onion and chopped sweet green pepper.
  • Into a casserole, bring water to a boil.
  • Mix in chicken broth concentrate, brown sugar, catsup and salt, until dissolved.
  • Mix together bacon mixture, chicken broth concentrate mixture and minute rice.
  • Transfer into an oven-safe dish.
  • Bake into preheated oven, for 20 to 30 minutes.
