Cheesy Wiener Rice

  • 5 pounds [2.27 kg] wieners, sliced
  • 12 ounces [304 g] onions, chopped
  • 2 1/2 pounds [1.13 kg] uncooked long grain rice
  • 6 cups [1.5 L] chicken broth
  • 48 ounces [1 L] Old cheddar cheese sauce
  • 1 [46-ounce / 1.4-mL] can kidney beans, drained
  • 3 tablespoons [45 mL] hot and spicy seasoned salt
  • Sour cream [optional]
  • Ripe olive slices [optional]
  • Lightly brown together wiener slices and chopped onions.
  • Rinse rice.
  • Mix rice into wiener slices/chopped onions mixture; stir-fry for minute.
  • Pour in chicken broth and cheese sauce; mix in drained kidney beans.
  • Season with seasoned salt.
  • Cover; cook over low heat for 40 minutes.
  • If desired, serve along with sour cream and ripe olive slices.
