Cold Rice and Stuffed Olives

  • 4 cups [1 L] well-drained boiled until soft yet still a little crunchy long-grain white rice
  • Peanut or olive oil, as needed
  • Stuffed olive slices, to taste
  • Olive juices, to taste
  • Salt and pepper. to taste
  • Paprika, to serve
  • Transfer well-drained rice into a serving bowl.
  • Mix in enough peanut or olive oil to keep rice grains from sticking to each other.
  • Add some stuffed olive slices along with olive juices.
  • Salt, pepper and mix well.
  • Refrigerate until ready to serve, really cold, sprinkled with paprika.
