Hawaiian-Style Cold Rice

  • 2 cups [500 mL] drained boiled white rice, cold from the refrigerator
  • 3/4 cup [190 mL] drained canned pineapple chunks
  • 1 can mandarine segments, drained
  • 1/2 cup [125 mL] grated coconut
  • 1/3 cup [75 g] sugar
  • 1/8 teaspoon [0.5 mL] salt
  • 2 teaspoons [10 mL] lemon juice
  • 4 cups [1 L] whipped cream
  • Into a large glass salad bowl, well mix cold rice, drained pineapple chunks and mandarine segments, grated coconur, sugar, salt and lemon juice.
  • Delicately fold in whipped cream, and serve.
