Baked Fried Rice

IngredientsPreparation
  • 2 cups [500 mL] long grain rice
  • 1 pack dry onion soup mix
  • 1 [10-ounce / 284-mL] can mushrooms, with liquid
  • 1 sweet green pepper, membranes removed and seeded, finely chopped [optional]
  • 3 cups [750 mL] chicken broth
  • 4 tablespoons [60 mL] soy sauce
  • 1 teaspoon [5 mL] salt substitute [optional]
  • 1/4 cup [60 mL] vegetable oil
  • Preheat oven to 300°F [150°C].
  • Mix together all ingredients into an oven-safe casserole.
  • Cover casserole.
  • Bake mixture into preheated oven, for 1 1/2 hours.
