- 2 cups [500 mL] long grain rice
- 1 pack dry onion soup mix
- 1 [10-ounce / 284-mL] can mushrooms, with liquid
- 1 sweet green pepper, membranes removed and seeded, finely chopped [optional]
- 3 cups [750 mL] chicken broth
- 4 tablespoons [60 mL] soy sauce
- 1 teaspoon [5 mL] salt substitute [optional]
- 1/4 cup [60 mL] vegetable oil

- Preheat oven to 300°F [150°C].
- Mix together all ingredients into an oven-safe casserole.
- Cover casserole.
- Bake mixture into preheated oven, for 1 1/2 hours.
