- Olive oil
- 1/2 cup [125 mL] chopped onion
- 1 sweet green or red pepper, membranes removed and seeded, chopped
- 1/2 pound [227 g] sliced Portuguese 'linguica' sausage, or bacon slices pieces
- 1 [19-ounce / 540-mL] can tomato sauce + enough water to get 3 cups [750 mL] liquid
- 1 cup [250 mL] rice
- Salt and pepper, to taste
- Oregano, to taste

- Preheat oven to 350°F [180°C].
- Pour enough olive oil into a small oven-safe baking pan to completely cover the bottom.
- Melt together chopped onion, chopped sweet green or red pepper and Portuguese sausage slices or cut bacon slices until onion is translucent.
- Well mix in tomato sauce/water mixture.
- Bring to a boil.
- Season mixture with salt, pepper and oregano.
- Stir rice into boiling mixture; cover pan.
- Bake into preheated oven, for approximately 20 minutes.
