Easy Spanish Rice

IngredientsPreparation
  • 1/4 cup [60 g] melted bacon fat, butter or margarine
  • 1 medium onion, into thin slices
  • 1/2 medium sweet green pepper, membranes removed and seeded, diced
  • 1/2 pound [227 g] ground beef
  • 1 1/3 cups [330 mL] 'minute' rice
  • 1 3/4 cups [440 mL] boiling water
  • 2 [19-ounce / 540-mL] each cans tomato sauce
  • 1 teaspoon [5 mL] salt
  • 1 hint pepper
  • 1 teaspoon [5 mL] prepared mustard
  • Melt fat into a casserole or a frypan.
  • Mix in onion slices, sweet green pepper dices, ground beef and 'minute' rice.
  • Cook over high heat stirring, until lightly browned.
  • Pour in boiling water and tomato sauce; salt, pepper then mix in prepared mustard.
  • Mix well then bring to a boil over high heat.
  • Cover thightly and leave to simmer for 10 minutes.
  • Serve immediately.
