Country Club Salad

Comments: Can be served on its own, accompanying a meal, or immediately before dessert, just by decreasing or increasing the portions.
Servings: 8
  • 1 package fresh spinach [uncooked]
  • 1 package bean sprouts
  • 1/2 cup [125 mL] raisins
  • 6 shallots, cut into pieces
  • 1 cup [250 mL] mushrooms, shredded
  • 4 or 5 celery branches
  • 1 green pepper
  • 1 red pepper
Dressing
  • 1/2 cup [125 mL] olive oil
  • 1/4 cup [60 mL] soya sauce
  • 1 teaspoon [5 mL] chopped garlic
  • Shred spinach and place in the bottom of a bowl.
  • Place all the other ingredients, in layers.
  • Refrigerate.
  • Mix all vinaigrette ingredients and set aside.
  • Right before serving, pour vinaigrette in the bowl and mix well.
