- 1 package fresh spinach [uncooked]
- 1 package bean sprouts
- 1/2 cup [125 mL] raisins
- 6 shallots, cut into pieces
- 1 cup [250 mL] mushrooms, shredded
- 4 or 5 celery branches
- 1 green pepper
- 1 red pepper
Dressing
- 1/2 cup [125 mL] olive oil
- 1/4 cup [60 mL] soya sauce
- 1 teaspoon [5 mL] chopped garlic

- Shred spinach and place in the bottom of a bowl.
- Place all the other ingredients, in layers.
- Refrigerate.
- Mix all vinaigrette ingredients and set aside.
- Right before serving, pour vinaigrette in the bowl and mix well.
