Beet and Apple Salad

Comments: Can be served with other salads, for a vegetarian meal.

  • 3 raw beets of medium size
  • 3 apples of medium size
  • 1/3 cup [80 mL] raisins
  • 1 tablespoon [15 mL] Horseradish sauce
  • 3 tablespoons [45 mL] peanut oil
  • 1 1/2 tablespoons [22.5 mL] wine vinegar
  • 1 teaspoon [5 mL] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] gray pepper
  • Peel beets, wash and grate into a salad bowl.
  • Core apples and grate into salad bowl.
  • Stir in raisins.
  • Prepare seasoning by mixing together in a bowl remaining ingredients.
  • Pour over salad, stir gently and serve.
