Caesar Salad
From: Diamant, Sainte-Foy, Quebec, Canada
  • Romaine lettuce
  • 2 garlic cloves
  • 2 egg yellows
  • 5 tablespoons [75 mL] olive oil
  • 5 tablespoons [75 mL] wine vinegar
  • 1 teaspoon [5 mL] Dijon mustard
  • 2 or 3 drops Tabasco sauce
  • 2 or 3 drops Worcestershire sauce
  • Croutons
  • Parmesan cheese
  • Rub a salad bowl with a clove of garlic.
  • Place Romaine lettuce, torn to pieces.
  • Mix together egg yellows, olive oil, wine vinegar, mustard, Tabasco and Worcestershire sauces.
  • Pour sauce over lettuce and mix well.
  • Sprinkle with croutons and Parmesan cheese.
