Bacon and Mushroom Salad

  • 11 ounces [340 mL] fresh spinach
  • 8 slices bacon [hint of maple]
  • 1 red onion, thinly sliced and separated into rings
  • 8 3/4 ounces [272.5 mL] fresh mushrooms, sliced
Vinaigrette
  • 4 tablespoons [60 mL] salad oil
  • 2 tablespoons [30 mL] vinegar
  • 1 garlic clove, crushed
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 teaspoon [2.5 mL] pepper
  • 1 pinch crystallized sugar
  • Tear spinach into bite-sized pieces.
  • Fry bacon until crispy; drain and break into bits.
  • Mix together spinach. bacon, onion and mushrooms.
  • Stir together vinaigrette ingredients.
  • Immediately before serving, pour vinaigrette over salad and stir.
