- 11 ounces [340 mL] fresh spinach
- 8 slices bacon [hint of maple]
- 1 red onion, thinly sliced and separated into rings
- 8 3/4 ounces [272.5 mL] fresh mushrooms, sliced
Vinaigrette
- 4 tablespoons [60 mL] salad oil
- 2 tablespoons [30 mL] vinegar
- 1 garlic clove, crushed
- 1/2 teaspoon [2.5 mL] salt
- 1/2 teaspoon [2.5 mL] pepper
- 1 pinch crystallized sugar

- Tear spinach into bite-sized pieces.
- Fry bacon until crispy; drain and break into bits.
- Mix together spinach. bacon, onion and mushrooms.
- Stir together vinaigrette ingredients.
- Immediately before serving, pour vinaigrette over salad and stir.
