Chinese-Style Salad with Cashew Nuts

Salad
  • 1 pound [454 g] bean sprouts
  • 10 ounces [284 g] spinach
  • 1/2 cup [125 mL] cooked rice
  • 2 celery branches, diced
  • 1 green pepper, cut into strips
  • 1 or 2 shallots, chopped
  • 1 cup [250 mL] mushrooms, sliced
  • 4 ounces [113 g] cashew nuts
  • 1/4 cup [60 mL] raisins
Vinaigrette
  • 1/3 cup [80 mL] olive oil
  • 2 tablespoons [30 mL] soya sauce
  • 1 garlic clove, crushed
  • Mix together all salad ingredients.
  • Mix together all vinaigrette ingredients.
  • Mix together salad and vinaigrette.
