Caesar Salad with Chicken

  • 2 cups [500 mL] cooked chicken, diced
  • 2 tomatoes, cut in quarters
  • 1 cup [250 mL] croutons
  • 8 slices cooked bacon, cut up
  • 2 tablespoons [30 mL] fresh parsley, chopped
  • 6 cups [1.5 L] Romaine lettuce, cut into strips
Vinaigrette
  • 1/2 cup [125 mL] mayonnaise
  • 2 garlic cloves, minced
  • 1 tablespoon [15 mL] anchovy paste
  • 1 tablespoon [15 mL] Worcestershire sauce
  • 1 tablespoon [15 mL] lemon juice
  • 1 tablespoon [15 mL] red wine vinegar
  • 1/4 teaspoon [1 mL] Tabasco sauce
  • 1/4 teaspoon [1 mL] olive oil
  • 1/2 cup [125 mL] Parmesan cheese, shredded
  • In a salad bowl, mix together chicken, tomatoes, croutons, bacon, parsley and lettuce.
Vinaigrette
  • Mix together all ingredients in an electric mixer or food processor.
  • Mix until texture is creamy and add to salad.
