Broccoli Salad with Sunflower Seeds

  • 3 cups [750 mL] broccoli bouquets
  • 1/2 cup [125 mL] sunflower seeds
  • 1/2 cup [125 mL] raisins
  • 1/2 cup [125 mL] Feta cheese, broken into bits
Vinaigrette
  • 1/2 cup [125 mL] low-fat yogurt
  • 2 tablespoons [30 mL] sugar
  • 1 tablespoon [15 mL] lemon juice
  • Salt and pepper
  • 1/4 cup [60 mL] low-fat mayonnaise
  • In a bowl, mix together broccoli, sunflower seeds, raisins and Feta cheese.
  • In a small bowl, mix together yogurt, sugar, lemon juice and mayonnaise; season with salt and pepper.
  • Mix well.
  • Pour vinaigrette over salad and stir.
  • Cover and refrigerate 2 hours.
