Bocconcini and Tomato Salad

Comments: Serve as an appetizer.
  • 1 tablespoon [15 mL] capers
  • 1/4 cup [60 mL] Italian parsley
  • 1/4 cup [60 mL] fresh basil
  • 1/4 cup [60 mL] fresh chives, chopped
  • 4 bocconcinis [brine cheese], sliced
  • Salt and pepper
  • 4 Italian tomatoes, sliced
  • A bit of sugar
  • 1/4 cup [60 mL] olive oil
  • 2 tablespoons [30 mL] red wine vinegar
  • Mince together capers, parsley, basil and chives.
  • Sprinkle over bocconcinis slices; season with salt and pepper.
  • Sprinkle a bit of sugar over tomato slices.
  • Mix together oil and vinegar and let stand 30 minutes at room temperature.
  • Before serving, pour oil and vinegar cheese and tomato slices.
