- 1 tablespoon [15 mL] capers
- 1/4 cup [60 mL] Italian parsley
- 1/4 cup [60 mL] fresh basil
- 1/4 cup [60 mL] fresh chives, chopped
- 4 bocconcinis [brine cheese], sliced
- Salt and pepper
- 4 Italian tomatoes, sliced
- A bit of sugar
- 1/4 cup [60 mL] olive oil
- 2 tablespoons [30 mL] red wine vinegar

- Mince together capers, parsley, basil and chives.
- Sprinkle over bocconcinis slices; season with salt and pepper.
- Sprinkle a bit of sugar over tomato slices.
- Mix together oil and vinegar and let stand 30 minutes at room temperature.
- Before serving, pour oil and vinegar cheese and tomato slices.
