Country Cole Slaw

  • 1 large cabbage, chopped
  • 1 1/2 cups [375 mL] carrots, grated
  • 1 cup [250 mL] green pepper, chopped
  • 1/4 cup [60 mL] shallots, chopped
  • 1 cup [250 mL] mayonnaise
  • 3 tablespoons [45 mL] sugar
  • 3 tablespoons [45 mL] vinegar
  • 1 1/2 teaspoons [7.5 mL] salt
  • 3/4 teaspoon [3.75 mL] dry mustard
  • 1/4 teaspoon [1 mL] celery seeds
  • 1 small green pepper, cut in rings [optional]
  • Combine cabbage, carrots, green pepper and shallots; set aside.
  • Combine mayonnaise, sugar, vinegar, salt, mustard and celery seeds.
  • Stir well and pour over cabbage preparation; mix well.
  • Cover and refrigerate until cold.
  • If you like, garnish with green pepper rings.
