Cranberry-Flavoured Vinegar

Servings: 2 cups [500 mL]
  • 2 cups [500 mL] fresh cranberries
  • 1/2 cup [125 mL] honey
  • 1/2 cup [125 mL] white wine
  • 1 clove of garlic
  • 1 cup [250 mL] red wine vinegar
  • 3/4 cup [190 mL] cranberry juice
  • 1/4 teaspoon [1 mL] pepper
  • Pour cranberries, honeay, wine and garlic into a small saucepan; bring to boil over high heat.
  • Reduce heat and boil about 15 minutesm until craberries are very tender.
  • Sift mixture, pressing cranberries to extract as much juice as possible.
  • Add vinegar, cranberry juice and pepper.
  • Pour into decorative bottle.
