Corn Chips Salad

  • 1 pound [454 g] ground beef
  • 1/4 cup [60 mL] dry onion soup mix
  • 3/4 cup [190 mL] water
  • 1 medium head lettuce, torn in bite-size pieces
  • 1 large tomato, cut in wedges
  • 1 small thinly sliced onion, in rings
  • 1/4 cup [60 mL] chopped green pepper
  • 1/2 cup [125 mL] sliced ripe olives
  • 1 cup [250 mL] sharp Cheddar cheese, shredded
  • 6 ounces [170 g] corn chips
  • Brown ground beef in skillet.
  • Sprinkle onion soup mix over meat; stir in water.
  • Simmer, uncovered, for 10 minutes.
  • In a salad bowl, combine lettuce, tomato wedges, onion rings, green pepper, ripe olives and cheese.
  • Toss well; spoon meat on top of salad.
  • Top with corn chips and serve.
