Artichoke Heart Salad

  • 1 package Iceberg mix lettuce
  • 1/2 cup [125 mL] red bell pepper strips, tomato slices, radish slices or mushroom slices
  • 1/2 cup [125 mL] cucumber slices
  • 4 canned artichoke hearts, quartered
  • 1/4 cup [60 mL] black or stuffed green olives, halved
  • 4 tablespoons [60 mL] country ranch salad dressing
  • Mix together lettuce, red pepper strips, tomato slices, radish slices or mushroom slices, cucumber slices, artichoke hearts and olive halves.
  • Just before serving, coat with salad dressing.
