  • Juice of 1 lemon
  • 1/4 teaspoon [1 mL] paprika
  • 1/4 teaspoon [1 mL] pepper
  • 1/2 teaspoon [2.5 mL] salt
  • 1/2 cup [125 mL] oil
  • 2 teaspoons [10 mL] Tabasco sauce
  • 1 cup [250 mL] boiled drained and cooled blackeyed beans
  • Into a salad bowl, whip together lemon juice, paprika, pepper, salt, oil and Tabasco sauce.
  • Skin cooled blackeyed beans.
  • Delicately stir beans into lemon juice mixture.
