Caesar Potato Salad
Comments: If desired, serve this salad garnished with olives.

  • 1 egg
  • 1/4 cup [60 mL] low-calorie Italian salad dressing
  • 1/4 cup [60 g] grated Romano cheese
  • 1 tablespoon [15 mL] Worcestershire sauce
  • 2 teaspoons [10 mL] prepared mustard
  • 1 teaspoon [5 mL] salt
  • 4 medium potatoes, peeled, boiled then cubed
  • Into a blender, mix together egg, Italian salad dressing, grated Romano cheese, Worcestershire sauce, mustard and salt, until well blended.
  • Toss into potato cubes, until well mixed.
  • Refrigerate until really cold, before serving.
