Carrot Olive Slaw

Comments: Excellent served really cold.
Servings: Approximately 2 1/2 cups [625 mL]
  • 1/4 cup [60 mL] salad oil
  • 2 tablespoons [30 mL] vinegar
  • 2 tablespoons [30 g] sugar
  • 1/2 teaspoon [2.5 mL] salt
  • Dash pepper
  • 3 cups [750 mL] shredded carrots
  • 1/4 cup [60 mL] pitted ripe olive slices
  • Combine salad oil, vinegar, sugar, salt and pepper into a glass bowl.
  • Toss lightly with shredded carrots and ripe olive slices.
  • Chill until really cold, before serving.
