Cabbage Apple Slaw
Comments: There are quite a few versions of the traditonal cabbage slaw.
Here, we add to the slaw the sweet taste of apples and carrots, along with just a little celery.
This salad can be prepared ahead of time and refrigerated until ready to serve.
If desired, to get a different texture, it is possible to add 1/2 cup [125 mL] chopped nuts or raisins to this salad or, for a more nourishing slaw, mix in 1/2 cup [115 g] grated Cheddar cheese.

  • 1 pound [454 g] cabbage
  • 1 medium onion, peeled
  • 2 green apples
  • 6 ounces [170 g] carrots, peeled
  • 2/3 cup [160 mL] mayonnaise
  • 1 teaspoon [5 mL] celery salt
  • Freshly ground black pepper, to taste
  • Freshly cut cored green apples wedges, to garnish
  • Fresh parsley sprigs, to garnish
  • Remove outside leaves of cabbage; using a large knife, cut cabbage into 2-inch [5-cm] wide wedges.
  • Remove and throw away core.
  • Using slicing disc, press cabbage weges and onion through food processor feeder.
  • Replace slicing with grating disc.
  • Peel, core and grated apples and carrots.
  • If you do not have a food proceessor, use a sharp knife or a hand-grater.
  • Into a large glass bowl, mix together cabbage and onion slices with grated apples and carrots.
  • Into a small glass bowl, mix together mayonnaise, celery salt and freshly ground black pepper.
  • Fold creamy mixture into cabbage mixture.
  • Serve salad immediately, garnished with freshly cut cored green apples wedges and parsley sprigs.
