- 5 ounces [156 mL] blackberry jam [seeded]
- 1/2 cup [125 mL] red wine vinegar
- 5 fresh basil leaves, thinly sliced
- 1/2 clove garlic, sliced
- 1/2 teaspoon [2.5 mL] salt
- 1/4 teaspoon [1 mL] ground white pepper
- 2/3 cup [160 mL] vegetable oil

- Into a food processsor, mix together blackberry jam, red wine vinegar, basil and garlic slices, salt and white pepper processing on-off.
- Motor running, slowly pour in vegetable oil into a steady thin stream.
- Proceed until smooth.
