Blackberry Jam Basil Salad Dressing
Comments: Excellent served along with lettuce, grilled or smoked pork and lamb chops.
Servings: Approximately 1 1/2 cups [375 mL]
  • 5 ounces [156 mL] blackberry jam [seeded]
  • 1/2 cup [125 mL] red wine vinegar
  • 5 fresh basil leaves, thinly sliced
  • 1/2 clove garlic, sliced
  • 1/2 teaspoon [2.5 mL] salt
  • 1/4 teaspoon [1 mL] ground white pepper
  • 2/3 cup [160 mL] vegetable oil
  • Into a food processsor, mix together blackberry jam, red wine vinegar, basil and garlic slices, salt and white pepper processing on-off.
  • Motor running, slowly pour in vegetable oil into a steady thin stream.
  • Proceed until smooth.
