Avocado Smoked Turkey Breast Salad

IngredientsPreparation
  • 1 kiwi, peeled then pureed
  • 1 teaspoon [5 mL] mayonnaise
  • 1 teaspoon [5 mL] or less curry powder
  • 1 pound [454 g] smoked turkey slices
  • 2 or 3 medium ripe avocados, peeled then sliced
  • 2 medium tomatoes, sliced then halved
  • 6 dill sprigs
  • Shredded lettuce leaves
  • Kiwi slices, to decorate
  • Well mix together kiwi puree, mayonnaise and curry powder; refrigerate mixture.
  • Into half-circles, evenly arrange smoked turkey slices, avocado slices and then tomato slice halves onto 6 individual plates.
  • Serve along with kiwi mayonnaise, garnished with dill sprigs and shredded lettuce, decorated with kiwi slices.
