Black Bean and Rice Salad

  • 1 [15-ounce / 426-mL] can black [turtle] beans, drained
  • 1/2 cup [125 mL] Italian salad dressing
  • 1/4 teaspoon [1 mL] pepper
  • 3/4 cup [190 mL] uncooked long-grain rice
  • Lettuce leaves
  • 3/4 cup [175 g] shredded Cheddar cheese
  • 3 green onions, thinly sliced
  • 1 medium tomato, chopped
  • Sour cream, to taste [optional]
  • Combine drained black beans, 1/4 cup [60 mL] of Italian salad dressing and pepper; cover and chill for at least 8 hours.
  • Boil rice according to directions.
  • Rinse cooked rice under cold running water then drain rice.
  • Combine drained rice and remaining 1/4 cup [60 mL] Italian dressing; stir well.
  • Chill for at least 8 hours.
  • Spoon cold rice mixture onto individual plates, already lined with lettuce leaves.
  • Spoon cold black bean mixture over rice.
  • Top with shredded Cheddar cheese, thin green onion slices then chopped tomato.
  • Serve, garnished with sour cream, if desired.
