Balsamic Vinegar Dijon Mustard Salad Dressing
Comments: Excellent with summertime bean salads, enhances the taste of freshly chopped fines herbs such as basil, oregano, parsley, chives and tarragon.
For even more taste, use old-fashioned Dijon mustard.
It is also excellent brushed on vegetable pieces while barbecueing.
Use to coat tomato, Bocconcini cheese and onion slices.
Leave ripe olives to marinate covered with this salad dressing before serving along with antipasto
Servings: 1 cup [250 mL]

  • 3 tablespoons [45 mL] balsamic vinegar
  • 1 tablespoon [15 mL] freshly squeezed lemon juice
  • 1 teaspoon [5 mL] Worcestershire sauce
  • 1/4 cup [60 g ] sugar
  • 2 tablespoons [30 mL] original Dijon mustard
  • 1/3 cup [80 mL] olive oil
  • 1 teaspoon [5 mL] canola oil
  • 1/4 to 1/2 teaspoon [1 to 2.5 mL] salt
  • 1/4 to 1/2 teaspoon [1 to 2.5 mL] pepper
  • Vigourously whip together balsamic vinegar, freshly squeezed lemon juice, Worcestershire sauce, sugar and Dijon mustard until smooth.
  • Whipping slowly, slowly pour in olive oil and canola oil until thick and well blended.Salt and pepper salad dressing.
