Stuffed Pita Pockets
Servings: 4 pockets
Stuffing:
  • 6 hard-boiled eggs, chopped
  • 4 tablespoons [60 mL] mayonnaise
  • Salt and pepper, to taste
  • 4 pita breads
Garnishings
  • 1 - Chopped zucchini and green onions
  • 2 - Chopped avocado and curry powder
  • 3 - Chopped ham and tomatoes
  • 4 - Olives and Feta cheese
  • Sweet green pepper slices or strips
  • Mix together chopped hard-boiled eggs and mayonnaise; salt and pepper.
  • Mix in garnishing 1 - 2 - 3 or 4, or divide eggs mixture into parts and mix in desired garnishings.
  • Half pita breads into pockets; open-up pockets.
  • Garnish to taste with garnishing[s], and with sweet green pepper slices or strips.
