- 6 English muffins, halved
- 8 hard-boiled eggs
- 1/3 cup [80 mL] mayonnaise
- 1/4 cup [60 mL] chopped green onion
- Salt and pepper, to taste
- 12 slices tomato
- 1 1/2 cups [375 mL] freshly grated Mozzarella cheese
- 1/3 cup [80 mL] freshly grated Parmesan cheese

- Arrange English muffin halves onto a cookie sheet; broil until lightly browned.
- Chop hard-boiled eggs.
- Mix in mayonnaise, green onion, salt and pepper.
- Spread mixture over English muffin halves; garnish with tomato slices.
- Evenly sprinkle first with Mozzarella cheese and then with Parmesan cheese.
- Bake into a preheated 400°F [200°C] oven, for 5 minutes.
- Then broil until cheese is golden brown.
