Egg, Tomato and Cheese English Muffins
Servings: 6 sandwiches
  • 6 English muffins, halved
  • 8 hard-boiled eggs
  • 1/3 cup [80 mL] mayonnaise
  • 1/4 cup [60 mL] chopped green onion
  • Salt and pepper, to taste
  • 12 slices tomato
  • 1 1/2 cups [375 mL] freshly grated Mozzarella cheese
  • 1/3 cup [80 mL] freshly grated Parmesan cheese
  • Arrange English muffin halves onto a cookie sheet; broil until lightly browned.
  • Chop hard-boiled eggs.
  • Mix in mayonnaise, green onion, salt and pepper.
  • Spread mixture over English muffin halves; garnish with tomato slices.
  • Evenly sprinkle first with Mozzarella cheese and then with Parmesan cheese.
  • Bake into a preheated 400°F [200°C] oven, for 5 minutes.
  • Then broil until cheese is golden brown.
