- 1 red bell pepper
- 2 teaspoons [10 mL] olive oil
- 1 teaspoon [5 mL] wine vinegar
- 1 small garlic clove, minced
- Salt and pepper, to taste
- 4 slices of bread
- 2 thin slices salami
- 2 thin slices mortadella [Italian cooked sausage]
- 2 thin slices Mozzarella cheese
- Marinated peppers

- Preheat oven to 350°F [180°C].
- Half red bell pepper, remove seeds; transfer into oven until skin is slightly blackened.
- Cool; cut into thin strips and reserve.
- Mix together olive oil, wine vinegar, garlic, salt and pepper.
- Mix in reserved red pepper strips.
- Leave to marinate for at least 1 hour.
- Brush 1/2 teaspoon [2.5 mL] marinade over each slice of bread.
- Garnish 2 slices of bread with 1 slice salami, 1 slice mortadella and 1 slice Mozzarella cheese.
- Top with remaining slices of bread.
- Wrap each sandwich separately; refrigerate for at least 2 hours before serving.
- Just before serving, add marinated peppers.
