- 1 cup [250 mL] Cheddar, Avarti, Brick or Colby cheese [or a mixture], diced
- 1 cup [250 mL] unpeeled apples, diced
- 1/2 cup [250 mL] thinly slice celery
- 1/4 cup [60 mL] chopped nuts
- 3 tablespoons [45 mL] mayonnaise
- 1 tablespoon [15 mL] lemon juice
- 1 teaspoon [5 mL] sugar
- Salt and pepper
- 3 pita breads
- Green lettuce leaves

- Into a medium-size bowl, mix together cheese[s] and apple dices, celery slices and chopped nuts.
- Into a small-size bowl, mix together mayonnaise, lemon juice and sugar.
- Fold mayonnaise mixture into cheese mixture.
- Just mix.
- Salt and pepper to taste; reserve.
- Half pita bread to get 6 halves.
- Garnish each pocket half with lettuce leaves.
- Evenly spread with reserved mayonnaise/cheese mixture.
