Cheese and Apple Stuffed Pita Breads
Servings: 6
  • 1 cup [250 mL] Cheddar, Avarti, Brick or Colby cheese [or a mixture], diced
  • 1 cup [250 mL] unpeeled apples, diced
  • 1/2 cup [250 mL] thinly slice celery
  • 1/4 cup [60 mL] chopped nuts
  • 3 tablespoons [45 mL] mayonnaise
  • 1 tablespoon [15 mL] lemon juice
  • 1 teaspoon [5 mL] sugar
  • Salt and pepper
  • 3 pita breads
  • Green lettuce leaves
  • Into a medium-size bowl, mix together cheese[s] and apple dices, celery slices and chopped nuts.
  • Into a small-size bowl, mix together mayonnaise, lemon juice and sugar.
  • Fold mayonnaise mixture into cheese mixture.
  • Just mix.
  • Salt and pepper to taste; reserve.
  • Half pita bread to get 6 halves.
  • Garnish each pocket half with lettuce leaves.
  • Evenly spread with reserved mayonnaise/cheese mixture.
