Health Sandwich

  • 2 slices whole bread, toasted
  • 1/4 cup [60 mL] light salad dressing
  • 2/3 cup [160 mL] alfalfa
  • 1 carrot, grated
  • 1 can salmon, drained
  • 1 onion, finely chopped
  • 1 teaspoon [5 mL] lemon juice
  • Salt and pepper
  • 2 slices of cheese
  • Preheat oven broiler.
  • Spread toasts with 2 tablespoons [30 mL] of the salad dressing.
  • Garnish with alfalfa and grated carrot.
  • Mix together drained salmon, chopped onion, lemon juice, salt, pepper and remaining salad dressing.
  • Thoroughly mix.
  • Evenly spread mixture over each toast.
  • Top with cheese slices.
  • Broil until cheese just starts to melt.
  • Serve immediately.
