- 2 thick slices whole wheat bread, toasted
- 1/4 cup [60 mL] light salad dressing
- 2/3 cup [160 mL] alfalfa
- 1 carrot, grated
- 1 can salmon, drained
- 1 onion, finely chopped
- 1 teaspoon [5 mL] lemon juice
- Salt and pepper
- 2 slices of cheese

- Preheat oven broiler.
- Spread 2 tablespoons [30 mL] salad dressing over each toast.
- Garnish with alfalfa and grated carrot.
- Thoroughly mix together drained salmon, chopped onion, lemon juice, salt, pepper and remaining salad dressing.
- Evenly spread mixture over each toast.
- Top with cheese slices.
- Broil until cheese just starts to melt.
- Serve immediately.
