Toasts with Bacon, Mexican-Style

  • 4 brown or white bread slices
Filling
  • 6 pounds [2.7 g] thinly sliced precooked bacon
  • Drained canned chick peas
  • 5 pounds [2.25 kg] tomatoes, sliced 1/4-inch [1-cm] thick
  • 96 ounces [3 L] liquid mix for Old Cheddar cheese sauce
  • 2 ounces [57 g] taco seasonings
  • 16 ounces [454 g] raisins
  • Toast 2 slices of bread, brown or white.
  • Arrange 2 ounces [57 g] bacon slices over 1 toast; garnish with chick peas and 2 tomato slices.
  • Reserve remaining toast.
  • Broil garnished toast until tomato slices are hot.
  • Prepare cheese sauce as indicated on package.
  • Season sauce with taco seasonings; mix in raisins.
  • Pour, lacing, 1/4 cup [60 mL] hot cheese sauce over garnished toast.
  • Half reserved toast, diagonally.
  • Arrange both toast halves over garnished toast.
