- 1/2 cup [125 mL] freshly minced mushrooms
- 1 tablespoon [15 mL] butter
- 4 teaspoons [20 mL] Dijon mustard
- 2 cups [500 mL], 1/4-inch [1-cm] thick slices smoked Gouda cheese
- 4 slices white bread, crusts removed
- 1 tablespoon [15 mL] softened butter

- Brown mushrooms into 1 tablespoon [15 mL] melted butter.
- Spread 4 slices of bread with Dijon mustard.
- Garnish 2 slices of bread with smoked Gouda cheese slices, then with browned mushrooms.
- Top with remaining slices of bread.
- Butter the outside of bread slices with remaining butter
- Brown into a frypan until cheese melts.
- Serve.
