Super Grilled Cheese

Comments: A quite special grilled cheese.
Serve, along with a green salad.
Servings: 2
  • 1/2 cup [125 mL] freshly minced mushrooms
  • 1 tablespoon [15 mL] butter
  • 4 teaspoons [20 mL] Dijon mustard
  • 2 cups [500 mL], 1/4-inch [1-cm] thick slices smoked Gouda cheese
  • 4 slices white bread, crusts removed
  • 1 tablespoon [15 mL] softened butter
  • Brown mushrooms into 1 tablespoon [15 mL] melted butter.
  • Spread 4 slices of bread with Dijon mustard.
  • Garnish 2 slices of bread with smoked Gouda cheese slices, then with browned mushrooms.
  • Top with remaining slices of bread.
  • Butter the outside of bread slices with remaining butter
  • Brown into a frypan until cheese melts.
  • Serve.
