Vegetable Sandwich Filling [Georgia, USA]

Servings: Enough filling for 1 loaf sandwich bread.
  • 3 carrots
  • 1 cucumber
  • 1 onion
  • 1 green pepper
  • 1/4 teaspoon [1 mL] salt
  • 3 ounces [85 g] cream cheese
  • 1/2 cup [125 mL] mayonnaise
  • Finely chop carrots, cucumber, onion, green pepper and salt; transfer chopped vegetables into a sieve, drain, pressing out all of the juices.
  • Mix together cream cheese and mayonnaise.
  • Mix together drained vegetables and cream cheese mixture.
  • Will keep for 5 to 6 days, refrigerated.
