Garden Pita Breads

Comments: For a change use Ricotta cheese instead or Cottage cheese.

  • 1 1/2 cups [375 mL] Cottage cheese
  • 1 1/2 cups [375 mL] seeded cucumber, diced
  • 1 1/2 cups [375 mL] diced or grated carrots
  • 1/4 cup [60 mL] mayonnaise or salad dressing
  • 2 tablespoons [30 mL] finely chopped green onions
  • 1 tablespoon [15 mL] vinegar
  • 1/2 teaspoon [2.5 mL] dill
  • Salt and pepper
  • 2 pita breads, halved
  • Lettuce leaves
  • In a medium bowl, mix together Cottage cheese, cucumber, carrots, mayonnaise or salad dressing, green onions, vinegar and dill; delicately mix, salt and pepper to taste.
  • Partly open pita pocket halves.
  • Garnish each half with lettuce and stuff with Cottage cheese mixture.
