Pita Bread Stuffed with Egg Salad

Comments: For a change, use Colby or Gouda cheese instead of Cheddar cheese.

  • 6 hard-boiled eggs, shelled and chopped
  • 1/2 cup [125 mL] mayonnaise or salad dressing
  • 1/3 cup [80 mL] finely chopped celery
  • 2 tablespoons [30 mL] finely chopped green onions
  • 1 1/2 cups [375 mL] grated Cheddar cheese
  • Salt and pepper
  • 4 pita breads, halved
  • Alfalfa
  • Into a medium bowl, mix together chopped hard-boiled eggs, mayonnaise or salad dressing, celery and green onions.
  • Mix in grated Cheddar cheese; salt and pepper, to taste.
  • Partly open each pita bread half.
  • Garnish with alfalfa and fill with egg mixture.
