- 4 wooden skewers, soaked into water for 30 minutes
Marinated Chicken
- 1 pound [454 g] chicken white, cubed
- 1 tablespoon [15 mL] white wine vinegar
- 2 tablespoons [30 mL] olive oil
- 1 tablespoon [15 mL] freshly chopped oregano
or 1 teaspoon [5 mL] dried
- 1 tablespoon [15 mL] freshly chopped thyme
or 1 teaspoon [5 mL] dried
- 1 garlic clove, minced
Garlic Sauce
- 1 cup [250 mL] cucumber, cut into tiny cubes
- 1 cup [250 mL] plain yogurt
- 2 garlic cloves, minced
- Salt and pepper, to taste
To serve
- 4 pita breads [unopened]
- 1 cup [250 mL] shredded Iceberg lettuce
- 1 tomato, chopped

Marinated Chicken
- Into a bowl, mix together chicken cubes, white wine vinegar, olive oil, oregano, thyme and garlic; leave to marinate overnight, refrigerated.
- Thread chicken cubes onto soaked wooden skewers.
- Barbecue, fry or bake into a preheated 350°F [180°C] oven for approximately 15 minutes, until no longer pink inside.
Garlic Sauce
- Into a bowl, thoroughly mix together cucumber cubes, yogurt, garlic cloves, salt and pepper.
To serve
- To serve, remove chicken cubes from skewers.
- Spread pita breads with garlic sauce; top with shredded lettuce, chopped tomato and chicken cubes.
- Roll; secure with toothpicks.
- Serve immediately.
