California Club Melt

  • 1 tablespoon [15 mL] orange marmalade or chutney
  • 2 slices of dark Pumpernickel bread
For each slice of bread
  • 4 slices light Monterey Jack cheese
  • 2 lettuce leaves
  • 1 slice low-fat turkey, cooked
  • 1/2 cup [125 mL] alfalfa sprouts
  • 4 orange sections
  • Spread marmalade or chutney over slices of bread.
  • Top each slice with 2 slices of cheese, lettuce leaf, turkey slice, alfalfa sprouts and orange sections.
  • Top with remaining 2 slices of cheese.
  • Broil until cheese melts and bubbles.
