Mexican-Style Chicken Tortilla Roll-Up

  • 1 soft taco shells kit
  • 1 cup [250 mL] sour cream
  • 2 tablespoons [30 mL] water
  • 3 cups [750 mL] minced cooked chicken or turkey
  • 1 [12-ounce / 340-mL] can corn kernels, drained
  • 1/2 cup [125 mL] finely chopped onion
  • 1/2 cup [125 mL] finely chopped celery
  • 1/2 cup [125 mL] finely chopped sweet green or red pepper
  • 3/4 cup [175 g] grated Cheddar cheese
  • 1 cup [250 mL] thick N'chunky salsa
  • Preaheat oven to 375°F [190°C].
  • Combine taco sauce and seasoning mix from kit together with sour cream and water, until smooth.
  • Stir in minced cooked chicken or turkey, drained corn kernels and chopped onion, celery and sweet green pepper.
  • Spoon approximately 1/2 cup [125 mL] chicken mixture into the center of one tortilla shell.
  • Roll-up and arrange, seam side down, into a greased 13 x 9-inch [33 x 23-cm] baking dish.
  • Repeat with remaining ingredients, fitting roll-ups tightly into baking dish.
  • Cover dish with al foil; bake into preheated oven, for 15 minutes.
  • Remove al foil; bake for 10 to 12 minutes longer, until heated through.
  • Sprinkle all over with grated Cheddar cheese.
  • Serve, along with thick N'chunky salsa.
