Open-Face Primavera Sandwich

  • 1 whole-grain baguette, sliced lengthwise
  • 2 tablespoons [30 mL] pizza sauce
  • 4 cheese slices
  • 1/3 cup [80 mL] freshly chopped asparagus, blanched
  • 1/3 cup [80 mL] chopped broccoli, blanched
  • 3 tablespoons [45 mL] chopped red onion
  • Cherry tomato wedges
  • Grated light Parmesan cheese
  • Diagonally cut each 1/2 baguette crosswise.
  • Spread each half with pizza sauce.
  • Top each with 1 slice of cheese, halved.
  • Into a bowl, combine chopped blanched asparagus and broccoli and chopped red onion.
  • Top cheese slices with mixture.
  • Top with cherry tomato wedges; sprinkle with grated Parmesan cheese.
  • Broil to melt cheeses.
