- 10 pounds [4,5 kg] boiled chicken meat dices
- 9 ounces [255 g] taco seasonings
- 5 cups [1.25 L] water
- 5 cups [1.25 L] hot Mexican-style salsa
- 100 [7-inch / 18-cm each] soft flour tortillas
- 100 ounces [2.8 kg] grated cheese

- Brown chicken dices.
- Mix in taco seasonings and water.
- Simmer until chicken is easily broken-up with a fork and liquid has reduced.
- Stir hot Mexican-style salsa into mixture; simmer for 15 minutes.
- Spread each flour tortilla with hot mixture.
- Add 1 ounce [28 g] chicken dices and sprinkle each with 1 ounce [28 g] grated cheese.
- Roll then wrap each stuffed tortilla into wax paper, and serve.
