Chicken Burrito

  • 10 pounds [4,5 kg] boiled chicken meat dices
  • 9 ounces [255 g] taco seasonings
  • 5 cups [1.25 L] water
  • 5 cups [1.25 L] hot Mexican-style salsa
  • 100 [7-inch / 18-cm each] soft flour tortillas
  • 100 ounces [2.8 kg] grated cheese
  • Brown chicken dices.
  • Mix in taco seasonings and water.
  • Simmer until chicken is easily broken-up with a fork and liquid has reduced.
  • Stir hot Mexican-style salsa into mixture; simmer for 15 minutes.
  • Spread each flour tortilla with hot mixture.
  • Add 1 ounce [28 g] chicken dices and sprinkle each with 1 ounce [28 g] grated cheese.
  • Roll then wrap each stuffed tortilla into wax paper, and serve.
