Creamy Tomato Sandwiches

  • 1 egg
  • 1 cup [250 mL] grated cheese
  • 1 [10-ounce / 284-mL] can cream of tomato soup concentrate
  • 1 pinch dry mustard [optional]
  • Toasted bread slices
  • Butter
  • Beat egg.
  • Mix beaten egg and grated cheese into cream of tomato soup concentrate.
  • If desired, stir in dry mustard.
  • Heat to melt cheese and thicken mixture.
  • Leave to cool.
  • Butter toasted bread slices on one, or both sides to grill.
  • Spread cheesy tomato mixture over half of buttered toasts, top with remaining toasts.
  • If desired, grill sandwiches.
