- 10 eggs
- 1/2 cup [70 g] flour
- 1 teaspoon [5 mL] baking powder
- 1/2 teaspoon [2.5 mL] salt
- 2 cups [500 mL] tiny pieces cream cheese
- 1 pound [454 g] Monterey Jack cheese, grated
- 1/2 cup [115 g] butter, melted
- 2 [4-ounce / 113-mL] each cans hot green pepper dices, drained
- Flour tortillas
- Any salsa, to taste

- Preheat oven to 350°F [180°C].
- Beat eggs until light and yellow as a lemon.
- Stirring delicately, mix in flour, baking powder, salt, cream cheese pieces, grated Monterey Jack cheese and melted butter.
- Then mix in drained hot green pepper dices.
- Pour mixture into a well buttered 9 x 13-inch [23 x 33-inch] oven-safe baking dish.
- Bake into preheated oven for 35 minutes, until golden and firm in the middle.
- Cut mixture into squares.
- Steam to reheat flour tortillas; arrange 1 egg square into the middle of each tortilla.
- Spoon some salsa on top of each egg square.
- Fold tortillas into burritos, and serve.
