Mexican-Style Egg Tortillas
Comments: For a change, garnish tortillas with spicy Mexican-style refried beans [frijoles refritos] before adding eggs, salsa and grated cheese.

  • Frying oil
  • 4 corn tortillas
  • Butter, for frying
  • 4 eggs
  • 1 cup [250 mL] hot green pepper salsa
  • 4 ounces [113 g] Cheddar cheese, grated
  • Into a deep-fryer, preheat some frying oil until really hot.
  • Fry in corn tortillas for just a few seconds; transfer tortillas onto a hot baking sheet to keep them warm.
  • Into a frypan, fry eggs into some melted butter until white is done but yolks still runny.
  • Meanwhile, preheat oven broiler.
  • Arrange 1 egg on each warm tortilla.
  • Warm-up then spoon some hot green pepper salsa on top of each egg.
  • Sprinkle eggs with grated Cheddar cheese.
  • Transfer eggs under preheated oven broiler to melt grated cheese.
  • Serve immediately.
